Award-winning chef Larkin Young to lead Basalt in Ellensburg, Washington

“My mission is simply to provide memorable, delicious food,” says Young. “Every step of the process is important to me – from the farmers who harvest the ingredients to the skills of the kitchen staff. It all adds up to a remarkable dining experience for our guests.”

Iron Chef winner and Seattle-area chef Larkin Young leads the culinary vision at Hotel Windrow’s adjoining restaurant, Basalt

Puget Sound natives already know Larkin Young as a chef behind menus at Tilth, Canlis and the Willows Inn on Lummi Island.

Central Washington visitors and locals will experience this cuisine first-hand at Basalt, Ellensburg’s highly-anticipated craft restaurant, slated to open in late 2019.

Locally Sourced Ingredients, Memorable Menus

“My mission is simply to provide memorable, delicious food,” says Young. “Every step of the process is important to me – from the farmers who harvest the ingredients to the skills of the kitchen staff. It all adds up to a remarkable dining experience for our guests.”

Young looks forward to bringing his experience to Basalt, and prides himself in sourcing regional foods, high quality ingredients, and seasonal flavors.

“I love shopping at the farmer’s market, visiting local producers, and seasonal foraging in the nearby forest. Many of the dishes I create are inspired by the moment, location, sights, sounds, smells, available products and the stories behind the food and the people creating it.”

About Basalt

Basalt will open in conjunction with Hotel Windrow in the fall of 2019. The restaurant and bar will reside just below the lobby of the hotel, and in the adjacent renovated Elks Lodge building. Basalt will be the featured centerpiece of the 35 foot atrium lobby of the hotel. The restaurant will also have its own separate exterior entrance. Hotel Windrow’s cocktail bar will be tucked beneath the Grand Staircase, easily accessible to both Basalt and Hotel Windrow guests.
