1st Course: Apple and cheese soup with candied beer bacon and rye croutons
Paired with IHB Mel’s Magic IPA

2nd Course: PNW Beef short ribs, carrots, onions and root vegetables braised in IHB Cozy Sweater Vanilla Milk Stout. Served with creamy potatoes.

This special dinner pairing centers around sustainability and local partnerships.

Iron Horse Brewery is proud to provide its spent grain to PNW Beef cattle. This high-protein grain is mixed in with hay chaff, formulated by professional nutritionists. The beef then makes its way to local restaurants like Basalt, and into the mouths of locals and visitors alike. 

From the brewery to the pasture to the plate, this sustainable partnership keeps business and resources local.

PNW Beef's Kyler Beard

Kyler Beard keeps busy full-time running PNW Beef. During the growing season Kyler and Judy run about 700 yearlings on grass, plus an additional 300 pairs (cow/calf). The Beards work tirelessly to improve the industry, always working with the next generation of rancher in mind.

PNW Beef is committed to providing beef eaters with USDA-Certified beef that is high-end, sustainable, and—most importantly—delicious. They believe strongly in sustainability, and work to reduce our impact on the environment by up-cycling local spent grain from breweries and other by-products.
